You'd be the human character you start with. So no switching races for the initial 2-4 characters, down the road if a character died, or if a player retired, a new character could be brought in already native to the fantasy world. But I'd rather jump off that bridge when we get to it.

She'll probably use the bow and sword equally (with a leaning towards the sword), and still have the runic spells, but not so much wilderness/survival stuff. Makes it much easier to figure a 2012 persona for, and gives you a sword-swinger.
